Happy Wednesday! We’re halfway through the week and today is treat day at work!
Every other week in my office, my team has what we like to call “SWAT Treats.” It is 30 minutes of casual time that we spend together without discussing any work-related topics – It is kind of like a recess for adults.
Tasty Treats + Awesome Coworkers + No Work = My favorite part of the day! And yes, my team IS the SWAT Team – Don’t we sound super badass? ;)
I try to bring one of my sweet creations into work once a week (The last thing I need around the condo is all of my baked goodies!) and luck has it that I am often on the rotation to bring treats for the team. Coincidence? I think not. Since I do love all things baking and my team devours everything that I bring to them, it seems like a fair trade.
A few weeks ago I was yet again tasked with bringing in a delicious treat that everyone would enjoy. I knew immediately what I would make. It involved chocolate (of course!) and peanut butter (yes!) and melted caramel (even better!).
I saw a similar recipe on Pinterest months ago and due to some lapse of judgement, did not pin it – Don’t you hate when that happens??! SO, this version is from memory and, if you can believe it, it tastes even better than it looks. How is that even possible??
SWAT (So Wicked & Tasty) Bars!
- 2 1/4 cups flour
- 1 cup butter, room temperature
- 1 cup brown sugar
- 1/2 cup white sugar
- 2 eggs
- 2 TBSP vanilla
- 1 tsp baking soda
- 1 tsp salt
- 1 1/2 cups chopped pretzels
- 1 – 8 oz bag of Reese’s Mini cups
- 1 – 14 oz bag of caramels, unwrapped
- 2 TBSP water
- 2 cups semi-sweet chocolate chips, melted
Preheat oven to 350 degrees and spray a 9×13 baking pan with cooking spray. Put butter and sugar into mixing bowl and beat until light and fluffy. Add eggs and vanilla and mix until blended. Slowly add salt, baking soda and flour and mix with blender until just combined. Fold in Reese’s and pretzels by hand. Make sure these are well-distributed – we don’t want ANY bites without goodies :) Spread batter into prepared pan and bake for 25 minutes.
Let brownie layer cool completely, approximately one hour. Once cooled, melt caramels and water over low heat, stirring constantly until melted. Pour caramel sauce over bars and place in fridge for 30 minutes to chill. Melt chocolate chips over low heat, again stirring constantly until melted. Spread melted chocolate over the caramel layer. Place back into the fridge for 30 minutes or until the chocolate layer is set. Cut and enjoy!
Time Saving Tip! Feel free to substitute ice cream caramel sauce in a jar for the bagged caramel. This will eliminate the need to melt the caramels and save you time!
