The BEST Cookie I’ve Ever Eaten – Andes Mint Cookies

Happy Friday!

Are you ready for the holiday weekend? Kyle and I are is currently packing up the Subaru with Christmas and Hanukkah presents galore so we can make our way to Chicago later this morning! I’m super excited to be in Chicago with family and friends but not so excited for the snowy roads on the way. We have to drive through Wisconsin and apparently they were hit pretty hard by “Snowmaggedon” so the drive is going to be even longer than normal :/

At least Kyle and I (and Mitchell!) will get to spend some good, quality time together today… And by quality time I mean Kyle spending his time driving while I either nap or freak out by how fast he is driving and tell him to slow down and pay attention! I’m such a great road trip companion :)

I have been in quite the holiday spirit this week! I finished wrapping presents while enjoying Christmas cookies, I listened to Christmas music while enjoying Christmas cookies, I stared into the hypnotizing glow of our Christmas tree while enjoying Christmas cookies AND I made Andes Mint Cookies while… well, I didn’t eat any cookies while baking. (Don’t worry… I’ve been doing The 3-Mile Cookie Eraser workout to make sure my pants still fit come 2013!)

I don’t know about you but the taste of minty chocolate brings back memories of childhood Christmases.  (Well, that and Olive Garden but that story is for another day…) Mint M&Ms, Frangos, hot cocoa with peppermint sticks, I love them all! So, when I stumbled upon a bag of Andes Mint chips at Target yesterday, I knew I needed to create something delightful with them. And Andes Mint Cookies were born!

Soft, yet chewy cookies filled with bits of mint and chocolate will definitely put you in the holiday spirit if you aren’t already there! The flavor of my Andes Mint Cookies is reminiscent of mint-chocolate chip ice cream or Thin Mints, if you ask Kyle. They would be perfect with a bowl of vanilla ice cream or a mug of hot cocoa :)

Andes Mint Cookies

Makes 30 Cookies


  • ¾ cup butter, softened
  • ¾ cup brown sugar
  • ¼ cup sugar
  • 1 egg
  • 1 TBSP vanilla extract
  • 2 cups flour
  • 2 tsp cornstarch
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ cup Andes Mint chips
  • ½ cup mini chocolate chips


In stand mixer (or with electric mixer), combine butter and sugars until fluffy then mix in egg and vanilla. Slowly stir in flour, cornstarch, baking soda and salt. Mix in Andes chips and chocolate chips by hand. Wrap in plastic wrap and refrigerate for at least one hour – Overnight works well too! Once ready to bake, preheat oven to 350 degrees. Spoon cookie dough onto baking sheet and bake for 8-10 minutes. Cookies will not brown so do not bake them over 10 minutes! Let cookies cool, on sheet placed on a wire rack for 5 minutes. Remove cookies to wire rack to cool completely. Enjoy!

One of my coworkers told me that these were the best cookies he had ever eaten. Now if that isn’t proof of the perfect cookie recipe, I don’t know what is! :)
