Healthified Spanikopita

Happy Thursday! Tomorrow’s Friday – woohoo! Kyle and I haven’t had a weekend at home in a month so, although I must admit, this 3-day week hasn’t been too strenuous, I am really looking forward to spending time in Minneapolis this weekend.

Did you make a health-conscious New Year’s resolution? Do you plan to… Eat less processed foods? Have more vegetarian meals? Get more vegetables into your diet? Eat clean? Cook more meals at home?

If so, then I have the perfect recipe for you! Heart-healthy olive oil and one of my favorite superfoods - spinach - make this easy dish a must for your next home-cooked healthy, vegetarian meal!

Layers of crispy, crunchy phyllo dough filled with a savory and rich center. This authentic Greek pie is so decadent, it will have even the diehard spinach-hater in your family asking for seconds! Plus my spanikopita comes in at 350 calories per serving – What’s not to love?

Healthy Spanikopita

Serves 4

Ingredients

  • 10 sheets phyllo dough
  • 1/4 cup olive oil
  • 2-10 ounce packages frozen spinach
  • 1/2 cup onion, finely chopped
  • 8 ounces feta cheese
  • 1 TBSP dill, dried
  • 1 TBSP parsley, dried

Directions

Preheat oven to 350 degrees and spray 9×13 baking pan with cooking spray (or brush with olive oil). Thaw frozen spinach according to package instructions and remove all water from the spinach. (I find that wrapping it in a few sheets of paper towels and squeezing it over the sink works really well!) In a medium bowl, mix together spinach, onion, feta, dill and parsley. Place 1 sheet of phyllo dough on bottom of baking pan and brush with olive oil; repeat the layering with 4 more sheets of phyllo dough. Pour spinach mixture over layer of phyllo dough. Place 1 sheet of phyllo dough on top of spinach mixture and brush with olive oil. Repeat with remaining 4 phyllo dough sheets. Place, uncovered, in oven and bake for 30-35 minutes or until top is golden brown. Enjoy!

 

Cut into bite-sized pieces and this spanikopita could also be served as an hors d’oeuvres at your next party - Your friends will be amazed at your cooking prowess!

Two servings of vegetables per portion, a flaky, irresistible crust and a delectable, yet healthy, cheesy filling! What are you waiting for?

  1. O to the MG, Becky! You have to stop posting all these delicious recipes! Well, not really, because I totally enjoy them. I would say I love spanakopita about as much as I love peanut butter and chocolate, but that might be a lie. But it almost wouldn’t be a lie because I really do love spanakopita, and I don’t have a great recipe for it. Now, I do. :)

    • Well at least this one is healthy, right?? Although, we could argue that peanut butter and chocolate are healthy too… In moderation of course! I thought making spanikopita would be really difficult, but it’s not! Let me know if you try it out :)

    I will definately make that in the next week or two:) thx.
    I am going to work on eating better…………..I think I get lazy with food prep, which is silly…………….I just need to plan and maybe put some things together at night—for lunch the next day or for dinner……………….
    I love leftover dinner for lunch, crockpot meals–that don’t need to be unhealthy.
    Today I took the time to put together a good salad to have at work–including a dressing I made, should be great. Saving $ on lunch is something I already do.
    I want to exercise more too—that’s hard in the MN winters, but shouldn’t be. I just like warmer weather to get out in:)

    • Let me know if you make it! I always put together my lunch the evening before… No matter how early I wake up, my mornings are always hectic and making my lunch in the rush is not an option. And yes! MN winters are incredibly difficult to exercise in – I think it suppose to be in the upper 20′s this weekend so I am going to try to get out for a run :)

      • That is what I have to do………my salad for lunch was great…..gotta have that most days:) I will follow up on the Greek pie—-yum.
        I too will appreciate the warmer temps—ha. Does Mitchell love winter?

  4. My “health” NY resolutions include practicing more yoga and eating more veggies. :) I’ve never made my own Spanikopita before! And this looks like a great recipe to tackle that. Thanks Becky!

  5. Looks delicious. I have never cooked/baked with phyllo dough but this would be a good way to start.

    • I had never cooked with phyllo dough prior to this spanikopita either – It is MUCH easier than I had anticipated!
