Homemade Chocolate + Peanut Butter Granola

Remember when I won a case (yes, a case!) of Parkers Farm peanut butter from Melanie over at Beautifully Nutty?

Parkers Peanut Butter

Ever since then it has been ALL peanut butter, ALL the time here at the Olives ‘n’ Wine household. Kyle and Mitchell might actually be turning into peanut butter as I type this ;)

It’s no secret that I have a love affair with peanut butter. Its gooey, crunchy texture, its savory yet slightly sweet flavor and its variety of culinary uses keep me coming back for more.

Granola - Dough

Today, I am sharing with you one of my favorite peanut butter delights. Although, to be honest, anything I make with peanut butter is one of my favorite recipes ;) It’s sweet, it’s chocolately, it’s crunchy and, yes, it is peanut buttery.

Granola 4

This granola recipe is shamefully easy and tastes just like your favorite chocolate chip peanut butter cookies. Am I serious? Yes. Trust me, I can’t come up with lies this good.

Ridiculously addicting and {somewhat} healthy – you MUST make this granola for your next brunch or girls’ night in or heck, for tomorrow’s afternoon snack.

Granola 1

Homemade Chocolate + Peanut Butter Granola (Adapted from Dashing Dish)

Makes 20 -1/2 cup servings

  • 5 TBSP  butter
  • 1 and 1/2 cups peanut butter
  • 5 cups old-fashioned oatmeal
  • 1 cup sugar
  • 1/3 cup honey
  • 1 cup chocolate chips
  • 2 eggs, beaten
  • 1 TBSP baking soda

Preheat oven to 325 degrees. Cover two large cookie sheets with foil and spray foil with non-stick cooking spray. In a small saucepan, melt butter and peanut butter over low heat, stirring occasionally, until melted. Meanwhile, mix all remaining ingredients together in  large bowl. Once peanut butter mixture is melted, pour over oatmeal mixture and stir until combined. Spoon granola “dough” onto cookie sheets and bake for 15 minutes. Break dough apart into smaller pieces (it will cook together like a cookie) and cook for another 15-20 minutes, until slightly crispy. Allow to cool completely, in a single layer, on wax paper. Enjoy!

Granola 3

This granola would be the perfect addition to a yogurt brunch buffet or a make-your-own ice cream sundae party!
