Raspberry Jam-Filled Ebelskivers

Breakfast. It’s the most important meal of the day.

Whatever your preference… Sweet or savory. Berries or eggs. Yogurt or bacon. Pancakes or waffles. We all have a favorite breakfast food.

Today, you will have a new favorite. It can be sweet. It can be savory. It can be speckled with chocolate or full of cheese. AND it can be served with a side of bacon. What more could you ask for?

Ebelskivers!

Yes, you read that right. Ebelskivers – Danish filled mini-pancakes. Fill them with whatever you prefer – brie cheese, Nutella, your mother’s jam, chocolate chips or soft-baked apples – and then savor devour each and every bite!

Today, my friends, I am sharing with you one version of MY favorite breakfast treats – Raspberry Jam-Filled Ebelskivers!

Fluffy, round pancakes filled with sweet, homemade jam and dusted with powdered sugar.

Your breakfast craving has just been taken to a new level.

Raspberry Jam-Filled Ebelskivers

Makes approximately 20 pancakes, 3-4 servings

Ingredients

  • 1 cup flour
  • 1 1/2 tsp sugar
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 eggs, yolks and whites separated
  • 1 cup milk
  • 2 TBSP butter, melted
  • 1 tsp vanilla
  • 1 TBSP butter, melted
  • Jam (or filling of your choice)

Directions

In mixing bowl, mix together flour, sugar, baking powder and salt. In a second bowl, mix together egg yolks, milk, 2 TBSP melted butter and vanilla. Add egg and milk mixture to flour and mix until combined. Using an electric mixer, beat egg whites on high speed until peaks form. Fold egg whites into batter. Brush ebelskiver pan wells with remaining melted butter and heat over medium heat. Once bubbles form in butter, add 1 TBSP of batter to each well (you’ll want to work fairly quickly in this step). Next add 1 tsp of jam in the center of each battered well followed by 1 TBSP of batter. Cook for 4-5 minutes, until the bottom of each ebelskiver is slightly brown and firm. Using a fork, flip each ebelskiver over in order to cook the opposite side of the pancake. The mini-pancakes should easily flip over and the uncooked batter will flow to the bottom of the well while flipping. Cook for an additional 2-3 minutes. Remove from pan and repeat until all batter is used. Enjoy!

These minis are the perfect bite-sized breakfast. Expect to see plenty of versions of ebelskivers on ONW in the coming months!

  3. Okay, 1. I can’t stop saying “ebelskivers” in a weird accent and 2. how have I never heard of these? They look so good!! Almost like a pancake/beignet hybrid. Perfection!

  4. I have always seen this pan in the Williams Sonoma catalog and wanted to try it out. These look absolutely amazing. I definitely switch back and forth between sweet and savory breakfast moods but these would hit the sweet spot. My hubby loves sweet breakfasts so I may have to buy the pan to try these out.

    How have I never heard of these! They look to die for good! My normal go to breakfast is egg white oatmeal with some kind of fruit and nut butter.

  7. I have never heard of these before and I am pissed- I’ve clearly been missing out! I prefer a savory breakfast, but Nutella-filled ebelskivers sound tooo good to pass up :)
