Weekly Meal & Fitness Plan – 4.12.14

Good evening!

I’m being super cool and catching up on errands and some things around the apartment tonight rather than heading out for a night on the town. The things you do on Saturday nights when you’re an adult ;)

It’s been a fun weekend so far and I’ll catch y’all up tomorrow – tonight is for sharing my eats and moves and health goal for the week!

Weekly Goal:

Eat homemade food every. single. meal. I have been eating out way too frequently lately and not only is it not the healthiest, it isn’t the best for my check book. Kyle is currently on a plane to Brazil and I do not like eating by myself/cooking for one so I am food prepping tomorrow in order to be prepared for the week!

Weekly Meal Plan:

  • Saturday: Sauteed spinach, mushrooms, and pine nuts topped with sunny eggs and hot sauce <– SO good!
  • Sunday: Passover Seder with Kyle’s family (we’re celebrating a little early so we can get everyone together on the weekend)
  • Monday: Crockpot Salsa Chicken
  • Tuesday: Quinoa topped with shrimp + sunny egg (and let’s be honest, hot sauce!)
  • Wednesday: Crockpot Salsa Chicken
  • Thursday: Spinach-Garlic Burger
  • Friday: Leftovers

Weekly Fitness Plan:

  • Saturday: Body Pump + 22,000 steps of walking (holy moly!)
  • Sunday: Run – hopefully outside if it isn’t storming
  • Monday: Body Pump
  • Tuesday: Run
  • Wednesday: Play Tough Class (basically, boot camp)
  • Thursday: Spinning
  • Friday: Run

  1. Mexican mash will be cooking in my crick pot tomorrow and going to bake some sunflower muffins. I usually go out one night on the weekend. My commute leaves me little time at home during the week so on the weekends I just want to be home.

  3. Looks like a good week of eats. I love cooking but it is hard to cook for one as sometimes the quantity of the recipe lasts me for 5 meals and the meal gets boring after maybe the third time in a row. Also nice job on the 22,000 steps. I got to about 18,000 steps today thanks to some zumba and walks around the park :-)

  4. Love topping things with an egg to complete a meal! My husband is an officer in the army is is gone for training for weeks on end about 4 months out of the year. He actually leaves next week again and I plan on saving a bunch of money with simple meals such as yours. I’ve also been freezing a small portion of our crockpot/soup/casserole meals to thaw out for myself to mix things up.

  5. I always find it hard to be motivated to cook when my husband is away–it’s so much easier to just pick up something quick!

  7. I love cooking every meal at home. But in your defense, you work so hard that it’s hard to cook all the time. Try to make some meals that you can freeze some of for another day. Also do you like rotisserie chickens at all? They are a staple for my dad.

  9. Have fun at the seder!!! My grocery shopping list was super short this week cause I plan on having my family feed me two gigantic meals and provide me with leftovers for the next month. The perks of being/marrying a Jew ;)
