Crockpot Salsa Chicken

There are foods in life that just aren’t pretty.

Mainly those foods made in crockpots and the leftovers I bring to work. And Sloppy Joe’s. And dark greenish-brown smoothies.

And bananas. Wait a minute… their looks belong in a whole other category ;) #ifyaknowwhatimean

Ahem, where was I? Oh yes, not-so-pretty foods.

The thing about “ugly” food is that it’s usually the food that tastes the best. Like Grandma’s homemade lasagna or green bean casserole or crockpot anything – in my opinion, pretty doesn’t matter when it comes to food. Taste is what matters.

And taste, my friends, is what brings me to today’s recipe!

Crockpot Salsa Chicken.

It might not be the prettiest, but will it ever make your taste buds sing!

Moist shredded chicken (yep, MOIST – thanks to the crockpot), combined with chewy corn and pinto beans and smothered in salsa. Lots of salsa.

Avocado Hummus 5

Great with a fork. Fabulous with a spoon. Tasty on a tortilla. The perfect pair to a margarita. And, obviously, decadent with sunny eggs and avocados – This recipe will be sure to knock your socks off any way you choose to eat it. And I mean that in the best way possible.

Just make sure to leave your reading glasses in the bedroom because, even though this dish tastes like a fiesta in your mouth, it sure doesn’t look like one ;)

For this Crockpot Salsa Chicken recipe, I’m directing you over to Katie’s blog. I made her recipe exactly as she recommended except that I added in a can of pinto beans, a touch of cayenne pepper, and doubled the amount of salsa. Girlfrands gotta have her beans and spice!

What is your favorite “ugly” food? I don’t know if I could choose just one! Most homemade, traditional family foods aren’t the prettiest but allll are my favs :)

    • Ugh… I feel your pain! I have a whole host of recipes that are freakin’ delish but look like vomit or baby poop so I refuse to post them. We need to do an ugly recipe link up day!     • Maybe we’re in summer mode (although clearly, Mother Nature is not…) and crock pots are more of a winter thing!

  19. This is one of our ALL TIME favorites! My husband loves anything and everything spicy! I can always count on this meal when I’m in a pinch or don’t know what to have. To hurry it up, I sometimes pound 2-3 chicken breasts, cover them in cumin, chili powder, and taco seasoning, drench them in salsa and bake them at 350 – 375 for 30-40 minutes. We then usually serve them over brown rice. Quick, simple, and delicious!

  21. So glad I’m not the only one who makes ugly food! Sometimes I feel that way with all the beautiful, seemingly-professional food photos I see on the regular. My favorite not-so-pretty meal is paleo eggplant lasagna. You’d think it’d be pretty, from the sounds of it, but more often than not it falls apart after coming out of the pan.
