Thanksgiving Dinner for Two

Thanksgiving is four days. FOUR DAYS!!

IMG 1177

{I saw this on Janae’s blog yesterday and couldn’t resist sharing!}

I hit up Target yesterday to get the remaining ingredients for our Thanksgiving dinner and it was cray to the zay. Get your birds and your stuffing and your cranberries while the getting’s good!

Since it is just Kyle and I this year, I thought I’d share the recipes I plan on making Thursday.

First of all, I have to send a HUGE thanks to Laura for sending me the most incredible and useful spreadsheet I’ve ever experienced… and I’ve seen A LOT of spreadsheets ;) Basically, you enter your Thanksgiving recipes and it creates a grocery list and a Thanksgiving Day timeline that will have all of your dishes done at the same time based on how many people you will have at your meal. Here is a link to her spreadsheet if you want to use it for your dinner as well!

Now, for the good stuff… Carbs and protein and fat… and sugar galore!

For breakfast, I’ll be making cinnamon rolls with a side of bacon (maybe I’ll even make pancakes for the mister) and we’ll be snacking on black olives, deviled eggs, Hawaiian bread with spinach-artichoke dip, and hummus with baby carrots throughout the day. There is a lot of snackage because I have to “time” dinner thanks to a noon-time football game. #boys But don’t worry, Kyle and I will either be running a turkey trot or hitting up BODYPUMP before we shove our traps full of holiday goodness!

I must say, this time of year may be the best to be pregnant… Halloween… Thanksgiving… Hanukkah… Christmas… NYE (oh wait, this one will suck…) – Bring on the food because I’m already in my stretchy pants! And, I can blame my turkey belly on the baby ;)

What is on your menu for Thanksgiving Day?

  1. Starting the day off with homemade cinnamon buns sounds like a fab idea. If Joshua and I had the whole day together (not just at 8pm when he gets home from work), I’d probably do the same. Just means less cooking/baking for this preggo lady. Ha

For our pumpkin pie, I’m using this recipe >> http://minimalistbaker.com/creamy-no-bake-pumpkin-pie/. I made a similar recipe last year Joshua and I both loved the raw crust.

    • Oh man, not until 8pm?! Poor guy! Pumpkin pie just isn’t doing it for me this year so I’ll have to wait until next Thanksgiving to try it again :)

  2. That sounds like an awesome meal with plenty of yummy leftovers. I’m so excited for you to try my pie. You have me thinking about making it too. That will be along with very untraditional steaks because I don’t like turkey or stuffing.

  5. I’m not cooking, just eating, because my hubby and I are driving down to San Diego to have Thanksgiving with his family. So I’ll dig into whatever they choose to serve me. And we’re also doing a Turkey Trot. Love to get a little sweat on before overeating and laying around all day!! Happy Sunday:)

  6. Oh yum! Love that you have everything planned out – and as an engineer that spreadsheet makes me smile! ;)
I was pregnant during the holidays and yes, except for NYE it’s a very good time to be with-child!!

    • Yes, yes it is ;) Although I feel like I need to eat really healthy other times right now because I’m going to be shoving my face full over the next month, LOL.

  7. Sounds awesome! I am making a sweet potato casserole from Oh She Glows and I’ll make a big meal out of that, stuffing, mashed potatoes, squash…and lots of pie! I cannot believe it’s already this week. Crazy!!! Your little boy is going to enjoy all that good haha!

    • I can barely stay up until midnight anyways so it’s not too much of a loss, haha! We went all out last year so it’ll be nice to just relax for 2015 :)

  10. I’m so glad you liked the spreadsheet! Here is another tip, regarding stretchy pants for Thanksgiving: I just randomly found the MOST AMAZING fleece-lined leggings at none other than Walmart today, for the incredible price of $7. They are made for juniors, so I had to go way up in sizes, but they feel soooooooo comfortable on. They are incredibly stretchy (to the point where they don’t feel tight at all, even though they are form-fitting) and after consultation with some girlfriends tonight, I am 100% wearing them for Thanksgiving dinner along with a nice tunic sweater.

    • Oooooh – I’m totally going to the Walmart down the street to try to find them today! I hate tight-feeling pants so these sound perfect.

  11. I love making thanksgiving dinner for just Josh and I. Make all the favs, skip any weird things that I eat out of obligation ;-) Sounds like a tasty meal! Love the 2x potatoes.

  12. menu sounds great! No sweet potatoes tho or yams!? Candied yams are my fav. Then stuffing, then green bean casserole. My mom is making that this year so I’m pretty stoked!

    • Sweetened sweet potatoes have always made me gag, LOL. I don’t know what it is, but I cannot stand them! So no, I’m skipping out on that this year ;)
