After an active day including body pump, lots of walking, and the Shedd Aquarium, I’m sitting back while Chef Kyle takes over in the kitchen.

Weekly Goal:

It was fairly obvious by my Instagram posts, but I did not do so well with last week’s goal of making every meal “homemade.” I just get SO bored cooking for one – blah! Well, now that Kyle’s back, my goal is to cook every night this week and have enough for lunch the next day. BUT, there is always room for Chipotle for at least one lunch during the week ;)

  • Sunday: Grilled salmon with roasted Brussels sprouts

I’m being super cool and catching up on errands and some things around the apartment tonight rather than heading out for a night on the town. The things you do on Saturday nights when you’re an adult ;)

It’s been a fun weekend so far and I’ll catch y’all up tomorrow – tonight is for sharing my eats and moves and health goal for the week!

Weekly Goal:

Eat homemade food every. single. meal. I have been eating out way too frequently lately and not only is it not the healthiest, it isn’t the best for my check book. Kyle is currently on a plane to Brazil and I do not like eating by myself/cooking for one so I am food prepping tomorrow in order to be prepared for the week!

  • Saturday: Sauteed spinach, mushrooms, and pine nuts topped with sunny eggs and hot sauce <– SO good!
  • Sunday: Passover Seder with Kyle’s family (we’re celebrating a little early so we can get everyone together on the weekend)
  • Monday: Crockpot Salsa Chicken
  • Tuesday: Quinoa topped with shrimp + sunny egg (and let’s be honest, hot sauce!)
  • Wednesday: Crockpot Salsa Chicken
  • Thursday: Spinach-Garlic Burger
  • Friday: Leftovers

Weekly Fitness Plan:

  • Saturday: Body Pump + 22,000 steps of walking (holy moly!)
  • Sunday: Run – hopefully outside if it isn’t storming

Mitchell Update + Weekly Meal & Fitness Plan 4.5.2014

Yesterday was a little crazier than I expected.

Kyle and I found a small pocket of fluid in Mitchell’s left earlobe when we were cleaning his ears on Thursday evening. (Are they called earlobes on dogs? Ear flaps? Anyone?!) We thought it was probably just a cyst or something minor since Kyle and Mitchel roughhouse ALL. OF. THE. TIME. <– drives me CRAZY mainly because we have no room for wrestling in the apartment! ;)

Anyways, I had a super busy day at work so Kyle took the little man into the vet to get it checked out before the weekend. His little bump turned out to be a hematoma – basically blood pooling under the skin. (BTW, this is super common for labs. It’s typically caused by ear infections which they are prone to getting.)

I knew it had to be more serious than I expected when Kyle called me at work to decide between the two options the vet gave us:

  1. Drain it, pump it full of steroids to seal it up, and put Mitchell on antibiotics/steroids for a few weeks.
  2. Perform surgery to completely remove it.

The last time Mitchell had surgery, he did not deal well with anesthesia (and there were lots of mommy tears), plus I like to attempt the easiest solutions first so we went with option #1.

He’s on the mend and doing well except for the fact that he has to wear a HUGE cone! I feel awful since he’s running into things, but I must say it is quite entertaining to watch him figure out how to drink water/eat his food. After a few tries, he figured it out like a champ… although he cried when he couldn’t reach the last few nibbles of food that were on the floor so Kyle hand fed them to the little guy. #spoiled

And now he has a new nickname… Cone Man. #poormitchell

Thank you for all of your concerns on Instagram and Facebook yesterday. And also thank you to my vet who has very reasonable prices. Mitchell should be back to his normal, naughty self in no time!

And now, onto my weekly meal and fitness plan for the week!

Weekly Goal:

Continue going strong with clean eating and my 24DC! I realllyyyyy wanted a beer last night. Like really, really, REALLY wanted a beer. It was a super long work week and a cold one sounded so refreshing! Thankfully, I stuck to my guns and just had soda water with dinner. Plus, I still need to be detoxing after last weekend so no beer for a little while longer, hehe ;) Go me!

Weekly Meal Plan:

  • Saturday: Turkey burgers + roasted Brussels sprouts
  • Sunday: Cannelini Bean and Spinach Soup leftovers (I froze some of my last batch!)
  • Monday: Grilled shrimp over brown rice
  • Tuesday: Chicken-avocado salad in lettuce wraps
  • Wednesday: Baked sweet potatoes with black beans, avocado, runny egg and salsa
  • Thursday: Tacos
  • Friday: TBD

Yep, I wore green lulu to the bar last night – The Iowa State game wasn’t playing on our network so we had to head out to watch the Cyclone victory!

Anyways, Kyle and I are getting ready to head out to see the Chicago River dyed green but I thought I’d quickly pop in and share my plan for eats and moves this week. I’ve also decided that I’m going to set a weekly goal or intention in each of these posts to help me focus on one specific thing each week. It is easy to get overwhelmed with everything we could be doing to stay healthy and active but by focusing on one thing each week, it helps to narrow our focus and be thankful for the small improvements and successes we see each day.

Weekly Intention: Focus on healthy and clean eating. I’ve indulged in a major way every single day since vacation and my body is craving healthier fuel. I can’t wait to share (and stick with!) my meal plan this week :)

Sunday Funday + Weekly Eats and Fitness

Well hello again. You’re getting TWO posts in one day – how’s that for a Sunday Funday? ;)

I’m going to recap Nashville in a post later this week. I have a lot of great things to share so I’m going to dedicate one full day to my love for all things Nashville and my cousin’s wedding!

Kyle and I landed in Chicago just before noon today. It made for an early morning after a night of dancing with my family but it was nice to get home and have most of Sunday to get ready for the work week!

Before the flight, I celebrated National Coffee Day because, well, why not? ;)

As soon as we landed, we grabbed a cab and headed to Oak Park (where Kyle’s dad and step-mom, Scott and Joy, live) since we left our car and Mitchell there for the weekend. Kyle quickly turned on the football game and I headed out for a manicure and pedicure with Joy! (Treat yoself! P.S. Are you linking up for Treat Yourself Tuesday this week??)

After being pampered, Kyle and I made a quick trip to Trader Joe’s to pick up some essentials for the week.

As a side note, check out this gorgeous, leather purse! The Instagram filter color in this photo doesn’t do it justice – I would call it a Marc by Marc Jacobs gray if you know what I’m talking about ;) Scott and Joy just returned from a 10-day trip to Italy and they brought me back this beauty along with a wallet for Kyle. I LOVE my new purse and their photos and stories definitely confirm that I need to get to Italy ASAP!

Once we got back to our apartment, Kyle and I headed out for a run to burn off a few bites of those Loveless Cafe biscuits from brunch yesterday ;)

The 35-minute run was much needed and refreshing and it apparently made me super productive for the rest of the afternoon. I did three loads of laundry, changed our sheets and prepped a ridiculous amount of food for the week. I have my Spinach & Cheese Lasagna Roll-Ups all ready to go for tomorrow night – mmmmm… :)

Speaking of food prep, we’ve realized that if we don’t get some basic ingredient food prep done on Sundays (bake chicken breasts, prepare a casserole, etc.), we are not going to eat healthy. Both of our commutes are longer than they were in Minneapolis and we’re both pretty darn exhausted by the time we get home after work. This means that we’re (or more like me!) going to be food-preppin’ machines every Sunday night from here on out!

A pizza contest, the downtown camel and weekly eats!

I almost named this post “The Final Housewife Weekend” but then I remembered that things are rarely ever final so I changed the name ;)

Per the usual of the past few weeks, I am going to share a photo recap of the weekend! Chicago never disappoints and our weekends are always a blast :)

I’m going to start with Thursday because there were lots of happenings in the ONW household that are worth recapping!

I am officially an Illinois resident now – after a scary morning train ride/walk through a super sketch area of Chicago (not kidding, a cop actually stopped to ask if I were lost…) to the drivers’ license office, I passed my test (100% baby!) and am now licensed to drive here :)

After my driver’s license experience, Mitchell had to make an emergency vet visit. His eyes weren’t looking the best and it turns out he had an eye infection :( Our new vet is amazing though and high-fived me for keeping him so healthy – I love visiting vets that are obviously in love with their jobs!

I am happy to report that Mitchell is back to his rambunctious self and his eyes look much better. I even think he kind of likes the eye drops!

Thursday night involved a sushi date night at Sushi Dokku where I treated myself to a pineapple cocktail – yum!

Friday night involved wine and dinner at a friends that even included a pizza-making contest! We all topped our own crusts and voted on which one was the best. I’m just going to go out on a limb and say that my pizza (a twist on the classic margherita) won, hehe…

On Saturday, Kyle and I spent the day (and night) in Evanston – home of Northwestern University. We had tickets to the football game and decided to spend time exploring the town.

Thanks to a friend’s recommendation, we checked out Tommy Nevin’s Pub – a fun Irish sports bar – for beers and lunch before the game. I had a grilled steak salad with lots of cucumber and avocado.

We walked from downtown to the stadium for what seemed like FOREVER (I think it was 2.5 miles) and then finally made it to the stadium after the game started. Northwestern’s football stadium is super small and quaint and we really liked how intimate it felt.

After the game we spent some time walking around Evanston and soaking up the views of the lake. All of that walking – at least 6 miles – left us hungry so before catching the Metra back home, we stopped for some amazing Greek food at The Olive Mountain for dinner! The service was great and the food was even better – I definitely recommend this restaurant if you ever find yourself in Evanston.

Being the cold wimp that I am, the 58-degree weather had me shivering on the walk to the train, so I stopped for a quick cup of tea to warm up. I am NOT ready for winter!!

This morning started out with 2 (yes, TWO!) workouts – a body strength class followed by cardio kickboxing to end the weekend on a healthy note.

The workout left Kyle and I STARVING and there was conveniently a taco festival a short train ride away! We hit up the taco fest with some friends and enjoyed the perfect fall day in downtown Chicago. To my surprise, they were offering camel rides (because camels have so much to do with taco cuisine…) at the festival. I can’t make this stuff up, people! I had to get a photo with the camel – I only look slightly terrified ;)

The rest of the night is going to involve preparing for my first day at my new job tomorrow (wish me luck!), listening to the Chicago Bears in the background and relaxing.

Since I am heading back to the real world this week, I thought it was time for me to start meal planning again! I picked a bunch of quick-to-prepare meals this week since I don’t know what my new schedule will entail.

  • Friday:  Body Pump + 30-minute run
  • Saturday: Elliptical + weight work in hotel gym OR rest – depends on how crazy my fam gets on Friday night ;)

How I’m Stayin’ Healthy This Week!

Happy Mother’s Day!

I decided to spend a little time outside this morning – it is SO sunny and beautiful here in Minneapolis today – which is why this post is a little later than normal.

Since I want to get back outside ASAP, I am going to do a {mostly} photo recap of my weekend so far :)

Friday started with a wine and appetizer happy hour/dinner with Kyle at Vic’s. They were offering a free bottle of wine and being the deal-lover I am, I could not pass up this opportunity to enjoy FREE wine on a patio! We are FINALLY able to sit outside in Minneapolis!!!!

Saturday was crazy windy but also the first day of my favorite farmer’s market in Minneapolis. So we braved the cold and wind (32 degree windchill, brrrr!) and hit up the market. I purchased some herbs for my garden, eggs, sprouts, kimchi, mixed greens and a baguette.

Even though it was super windy all day Saturday, Kyle wanted to try out his new bocce ball set that he got from my mom for Christmas. Note to self, do not bring Mitchell with us when we are playing a game that involves throwing balls. Needless to say, we played about one game before giving up and resorting to stuffing our faces with wine and cheese and bread… Mitchell thought that the game involved him moving the balls around ;)

Saturday also included some errand running – Trader Joe’s and a nursery for my hanging flower baskets! More flower photos to come – I still have a lot more to plant!

My finds at TJ’s included an amazing chocolate – cookie butter bar (go get one, now!) and flowers. I like to tell myself that Mitchell got me these for Mother’s Day but let’s be real… he’s a dog and I paid for them myself. #fail

Other highlights of this weekend include seeing The Great Gatsby last night!! I broke my cardinal rule of re-reading the book before seeing the film but I just couldn’t wait any longer. I have no regrets either. Leo and Toby were amazing. I might go see it again tonight just to spend some time with them again ;)

I also did a little healthy (vegan and gluten-free!) baking. Check back tomorrow for the recipe – You won’t want to miss it!

I’m not sure how many of you know that I was a vegetarian for almost 3 years. After getting married and traveling frequently, I gave up the vegetarian “title” since I wanted to be able to try new foods in different countries and not have to ask about every single ingredient in an entree. I still don’t eat that much meat but have noticed recently that it has been creeping into my diet at an unhealthy rate. So, I’ve instituted a new rule for myself – I can have one meal with meat per week.

I honestly don’t like it that much and feel so much better (energy, digestion, alertness, etc.) when I don’t eat meat. Plus it is expensive and I feel like I can cook and create better meals in my kitchen without meat! We’ll see where this leads me… who knows, I may become a full vegetarian (plus a side of sushi every now and then!) again soon :)
